Chicken Afritada
Ingredients
- 3 tbsp cooking oil
- 1 head garlic minced
- 2 thumb-size ginger sliced
- 1 large onion chopped
- 2 medium tomatoes diced
- 2 kg chicken cut into serving pieces
- 3 pcs dried bay leaves
- Salt and pepper to taste
- 1 small bottle lime soda e.g., Sprite or 7Up
- 2 tbsp oyster sauce
- 1 cup tomato sauce
- 2 small tomatoes quartered
- 1 large carrot sliced
- 1 small can liver spread
- 1 tbsp tomato paste
- ½ cup green peas
- 1 large red bell pepper sliced
- 3 long green chilies
Instructions
Cook the Chicken:
- Heat cooking oil in a large pan.
- Sauté garlic, ginger, onion, and tomatoes until aromatic and softened.
- Add the chicken pieces and cook until lightly browned.
Add Seasonings and Simmer:
- Add dried bay leaves, salt, pepper, oyster sauce, and tomato paste. Stir well to coat the chicken.
- Pour in lime soda and tomato sauce, then mix thoroughly.
- Add liver spread and cover the pan. Simmer over medium heat for 20–25 minutes or until the chicken becomes tender.
Add Vegetables:
- Add carrots and cook for 5–7 minutes.
- Stir in green peas, bell pepper, and long green chilies.
- Simmer for another 5 minutes or until the sauce thickens and vegetables are tender.
Finish and Serve:
- Adjust seasoning with salt and pepper to taste.
- Serve hot with steamed rice.
