Chicken Lime Soda Adobo
Ingredients
- 3 tbsp cooking oil
- 1 head garlic minced
- 2 medium onions chopped
- 2 thumb-size ginger sliced
- 1 large whole chicken chopped into serving pieces
- 1 stalk lemongrass bruised
- 1 chicken cube
- 3 pcs dried bay leaves
- Ground black pepper to taste
- 2 small bottles of lime soda about 500ml total
- 2 large potatoes peeled and quartered
- ½ cup soy sauce
- ¼ cup vinegar
- 9 pcs hard-boiled eggs
Instructions
Prepare the Base:
- Heat cooking oil in a large pan or pot over medium heat.
- Sauté garlic, onion, and ginger until aromatic.
Cook the Chicken:
- Add the chopped chicken and cook until lightly browned on all sides.
- Add lemongrass, chicken cube, bay leaves, and ground black pepper. Stir well.
Add the Sauce:
- Pour in the lime soda, soy sauce, and vinegar.
- Cover and let it simmer for 20–30 minutes or until the chicken is tender.
- Do not stir until vinegar has cooked down slightly.
Add Potatoes:
- Add the potatoes and continue to simmer until they are soft and the sauce starts to thicken.
Finish the Dish:
- Add hard-boiled eggs and simmer for another 3–5 minutes to absorb flavor.
- Adjust seasoning with salt, soy sauce, or sugar if desired.
Serve:
- Serve hot with steamed rice, ensuring each serving gets some chicken, potato, egg, and thickened sauce.
