Tuna Taco
Ingredients
- 1 tbsp oil
- 3 cloves garlic minced
- 1 small onion chopped
- 1 small tomato chopped
- 1 small potato finely diced
- 1 small canned unflavored tuna drained
- Salt and pepper to taste
- 3 –4 pita wraps
- Grated cheese
- Lemon juice
- Garlic mayonnaise for dipping
Instructions
- Sauté garlic in oil until fragrant
- Add onion and tomato, cook until soft
- Stir in diced potato, cook until tender
- Add tuna, season with salt and pepper, cook for 2–3 mins
- Heat pita on a pan, sprinkle cheese on half
- Add tuna mixture, fold and grill until golden
- Splash with lemon juice before serving
- Serve with garlic mayo on the side
