Ingredients
  

  • 2 kg shrimp cleaned and deveined
  • ¼ cup butter
  • 1 head garlic minced
  • 1 tbsp annatto powder
  • 2 tbsp oyster sauce
  • 1 can 240ml pineapple juice
  • Salt and pepper to taste
  • Juice of half a lemon
  • Chopped green onion for toppings

Instructions
 

Cook the Shrimp:

  • In a large pan, melt the butter over medium heat.
  • Add minced garlic and sauté until fragrant but not browned.
  • Stir in annatto powder to color and infuse the butter.
  • Add the shrimp and toss until it turns light pink.

Add Sauce & Simmer:

  • Pour in the pineapple juice and oyster sauce.
  • Season with salt and pepper to taste.
  • Squeeze in lemon juice and mix well.
  • Let simmer for 5–7 minutes until shrimp is fully cooked and sauce slightly reduces.

Garnish & Serve:

  • Turn off heat and sprinkle chopped green onions on top.
  • Serve hot with steamed rice or garlic rice.
